Vinegar in bread my sound nasty but vinegar helps a lot in bread making, it makes any bread dough soft and smooth, makes bread shelf life last longer and enhances color and flavor and making the bread crumb softer too. Butter is fat and fat when added to bread makes flavorful, softer, higher rise, crisp crust and longer bread shelf life. Honey when added to bread dough makes dough more sweeter, more flavorful and yes longer shelf life.
