275 grams Cake flour
200 grams granulated sugar
1/4 tsp salt
6 large egg yolk (separate the yolk and white)
1/2 cup evaporated milk or any milk
1/2 cup water
1 tsp vanilla
1/2 cup cake oil or vegetable oil
6 egg whites
1/2 cup granulated sugar
1/2 tsp cream of tartar
-Sift the flour baking powder and salt
-Separate egg yolk and egg whites, put well at the center of the dry ingredients mix egg yolk, milk, water, vanilla, sugar and oil until smooth in consistency
-Using stand mixer beat egg whites with cream of tartar using high speed until foamy, add sugar little by little mix until stiff peak
-combine meringue with the batter by 2 batches, pour 1/4 mixture of meringue then the rest. Do not over mix. Pour the mixture into a individual cupcake molds.
-Bake 375 degree Fahrenheit until toothpick inserted clean.
