Toasted Mamon

Ingredients

260 grams Cake flour

200 grams granulated sugar

1/2 tsp salt

1/2 cup milk

1/2 cup water

1/2 cup vegetable oil

6 large egg yolk

1 tsp vanilla

Meringue

6 large egg white

1/2 cup granulated sugar

1/2 tsp cream of tartar or lemon juice

Direction

-Sift the flour baking powder and salt

-Separate egg yolk and egg whites, put well at the center of the dry ingredients mix egg yolk, milk, water, vanilla, sugar and oil until smooth in consistency

-Using stand mixer beat egg whites with cream of tartar using high speed until foamy, add sugar little by little mix until stiff peak

-Combine meringue with the batter by 2 batches, pour 1/4 mixture of meringue then the rest. Do not over mix. Pour the mixture into a rectangular pan with baking paper.

-Bake 375 degree Fahrenheit until toothpick inserted clean.

-Cooled

-Cut the cake 1 inch thickness and arrange into a baking sheet

-Baked the mamon using medium to low heat until crispy. Need to watch every 5 minutes so that it will not burned.

-Cooled and packed in a airtight container or plastic so that it will retain its crispiness.
